INHIBITION OF LACTOPEROXIDASE BY RARE SACCHARIDE, AND UTILIZATION THEREOF

PROBLEM TO BE SOLVED : To obtain an inhibitor with which enzymic activities of lactoperoxidase are freely regulated; and to provide a method for suppressing microbiological inhibition by the lactoperoxidase. SOLUTION : The lactoperoxidase inhibitor comprises a rare saccharide. Preferably, the rare saccharide of the lactoperoxidase inhibitor is D-amylose. The method for suppressing the microbiological inhibition of a system wherein the microbiological inhibition by the lactoperoxidase is a problem uses the inhibitor.
